Application
Lipase from porcine pancreas has been used:
- for the analysis of fatty acid at the 2-position of triglycerides.
- to determine the indigestible fraction of plant source that is resistant to the action of digestive enzymes.
- as a component of dissolution media to study the dissolution profiles of theophylline.
Lipases are used industrially for the resolution of chiral compounds and the transesterification production of biodiesel.
Biochem/physiol Actions
Lipases catalyze the hydrolysis of esters in aqueous solutions and the synthesis of esters in non-aqueous solutions. They also produce hydroxyl and carboxylic groups through the hydrolysis of ester linkages in poly(ethylene terephthalate).
