General description

Sodium benzoate is a safe food preservative and has antimicrobial functionality. It has a molecular weight of 114.11 Da. Sodium benzoate is used in bakery products, juice and cheese. In the liver, it is conjugated to glycine and is eliminated as hippuric acid from the urine.[1]

Application

Sodium benzoate has been used to test its effect on phencyclidine (PCP) induced locomotor activity in mice.[2]

Biochem/physiol Actions

Sodium benzoate also has pharmaceutical applications and is component of syrup and transparent tablet. High levels of sodium benzoate may trigger histamine release and also induce cell damage.[1] It is recommended for the treatment of urea cycle disorders. However, high levels of sodium benzoate may contribute to glycine deficiency and may impose neuromodulatory effects.[3]
