General description

Acetaldehyde comprises of a carbonyl group linked to a hydrogen atom.[1] It is a well-known mutagen and carcinogen.[2]

Application

Acetaldehyde has been used as a reference standard for the determination of acetaldehyde as a volatile constituent of extra virgin olive oil (EVOO) by gas chromatography coupled with ion mobility spectrometry (IMS).[3]
It may be used as a reference standard for the detection of acetaldehyde which is formed as a pyrolysis product of tobacco additives[4] and as endogenous aldehyde in human urine[5] by gas chromatography-mass spectrometry technique.
